I don’t know if she found the recipe on a soup can, or invented it herself, but it was in every way a decadent delight to the senses.

While most moms were serving up healthy tuna dishes with egg noodles and peas, mine went straight for the junk food jugular – nothing healthy here, just palate-pleasing, salty joy! No pasty noodles, no peas glaring greenily up from your plate, just heaven in a mound of smooshy-crunchy wonderment…

You can tell I loved the stuff. Since going vegetarian, I have lived three full decades deprived of that succulent goodness...

Until now, that is! I have at last perfected a 100% vegetarian Mock Tuna potato stick casserole recipe that not only captures the flavor and texture of Mom’s original, it’s super easy to make!
