Properly speaking, roasting means cooking in hot, dry air, which requires lifting a turkey, chicken, or roast off the pan surface so its bottom doesn't boil in cooking juices and it browns evenly. This 7-by-11-inch rack does the trick, adjusting to seven positions to firmly hold any size bird or roast. Because it's nonstick, the rack won't pull off chicken or turkey skin--though it's always helpful to spray any roasting rack with oil before use. Clean the rack with a nylon or plastic scrubber to extend the life of its nonstick surface, and fold it flat for compact storage. --Fred Brack
